Taiwanese street food festival 台味食煮 - Day 3 - Braise pork over rice :Chu rou hui fan 豬肉燴飯

 

I would say hi-speed internet and street food are probably the most essential two things for college students live the dormitory in Taiwan. Most of student dorms have no kitchen because you do not need it and you will not use it. How would you resist various tasty street foods with satisfying big portion and only cost less than 2 euros? It is way more convenient taking out street food near by campus than spending 15 mins on riding motobike to do grocery in supermarket, not alone still need to get the food done and clean the mess after.

 

Every student has his/her No.1 campus street food, I think of braise meal over rice which used to my daily meal for first-two-year-college life from time to time. The name "braise meal over rice (Hui fan, 燴飯)" derived from the style its set on the plate. It is served on the top of rice with mouthwatering gravy, typically with meat and vegetables, thicken by corn powder or starch.
Although there is no need to find any excuse to treat your stomach well, I "accidentally" got some marinated pork strips left from pork thick soup, and this just make the occasion stand even stronger.

 


Ingredients:
1. Marinated pork strips (see Taiwanese street food festival - day 2 Pork thick soup (Chi rou geng 赤肉羹) to marinate perfect pork strips)
2. 1 carrot, stripped
3. 1 cucumber, stripped
4. 1 onion, stripped
5. 3 garlic, clove
6. 3 mushroom, sliced
 

Seasonings:
1. 1Tsp oyster sauce
2. 1tsp sugar
3. 1tsp black pepper
4. 3 Tsp corn powder, divided
5. 1 and 1/2 cup of water, divided

Instructions:
1. Heat oil pan, add carrot, onion and garlic to stir fry until the aroma comes out and onion become semi-transparent.
2. Combine mushroom with existing ingredient in the pan.
 

3. Mix marinated pork strip with 2 Tsp corn powder until every piece is well coated.
4. Add pork piece by piece, do not flip until the coating formed.
 

5. Add cucumber and stir several times. Add small amount of water (not more than 1/2 cup) if it is too dry and season with oyster sauce and sugar








6. Dissolve 1 Tsp corn powder into 1 cup of water. Turn off the heat and pour the mixing evenly on the ingredients. Give a gentle stir. Add black pepper before serve.
