JiJu Inspiration: Green Tea (Matcha) Orange Cookie 抹茶香橙餅乾


It has been a busy week, a newly wedding couple I knew from previous job came for honey moon, another girl drop by before going back to Taiwan after finished her MBA in Italy. Thanks to them, I have motivations to "re-explore" Amsterdam under various conditions of weather. The longer I stay here, the more I take this one of must-visit cities of your life for granted. I have to admit Amsterdam got its uniqueness and beauty, especially when you are lucky enough to have a clear sky, tiny bit of sunshine and bunch of fresh beer. There is no significant spot you have to see, yet, wandering around streets, following the stream of the canals without checking Google map is the MUST DO if you have chance to visit this city.

從上周末開始剛好有朋友接續來訪,讓我有機會踏進阿姆斯特丹,用旅人的角度看這個城市。從上周末的狂風暴雨吹斷一把陪伴我多年的堅固大傘,一個小時體驗四季變化外加冰雹的荷蘭天氣特產,因為朋友這些讓我周末關在家裡的理由,即使風雨交加也甘之如飴。

Spring finally arrived! After a extremely windy and rainy week, now I am able to enjoy writing my blog under a lovely spring sun bless. My mini garden delivers the same message with dancing plants and pushing up sprouts. On the way to office, wild daffodils are having their parade before Keukenhof Park take action. How can't people feel energetic been surrounded by such a vivid world?

這個復活節的周末長假讓人渴望已久白天藍雲與回暖的溫度,讓人不禁掛上一抹微笑,春天終於來了。從超市AH得到的蔬果種子已經慢慢發芽,在和緩的太陽照耀下探出頭來伸伸懶腰的樣子可愛極了。居住在荷蘭總是要等到春天才真的有"復活"的感覺,走出門外騎在單車專用道上沿路綻放的黃水仙,耀眼的金黃不知覺地給過客滿滿的活力與能量。 

To bring my Easter long weekend more spring-ish, I decide to go for Green tea Orange Cookie. It is the perfect combination of smell, taste and presentation to kickoff the season. Fresh with a touch of bitterness from green tea leaves with fruity sweet orange is just like the sprout finally break through the soil to be embraced by happy sun.

Green tea or I should say Asian element is new trend in the Netherlands. My favorite Body Shop launch new a body range - Green tea flavor caught my attention. Fresh smell make me fall in love with those trail sample right away. This perfect match this Green tea Orange cookie this week. What a coincidence!

Ingredients:
1. 350g flour
2. 100g unsalted butter, room temperature
3. 70g sugar
4. 20g mocha powder
5. 2 eggs, beaten
6. 1 orange zest

Instructions:
1. Whisk butter with low speed mixer until it become soft and creamy.
2. Add sugar and keep mixing until it become pale and frothy.
 

3. Add egg in two batches and mix well.
 

4. Sift flour and mocha powder, add into wet mixer in two batches. Mix it by folding and pressing. Add orange zest and combine it well.
 

5. Shape into a pingpong size ball and place on the baking paper. Repeat for the rest of the dough. Use the bottom of the water glass and press straight from the top into a 0.5 cm think cookie dough.
 

6. Put in preheat oven to 165 degree and bake 15 mins. Turn off heat and leave in the oven for another 5 mins. Remove from the oven and transfer cookies to a wire rack. Leave for a few minutes until cool enough to handle.
