JiJu Inspiration - Prepare to start the first busy week in 2014 with Meatball Stew 肉丸子


This is one of my favorite recipes I made and wanted to share with you in 2013. I believe every family, from east to west, has a secret meatball recipe. The reason I love making meatball is you really have to take some time, inject your love and care into it by mixing with bare hands. I will make quite a bunch of meatball every single time, the couple minutes effort can save your cooking time for the following entire week.

The ingredient I use is more westernized, replacing scallion by finely chopped onion, also sprinkle some nutmeg to enhance flavor to next level. If I want to crown this as a "secret meatball recipe", the cracker itself will definitely take the credit! Combine with spicy asian gravy, it goes just amazing with rice as well as with noodles. This comforting meatball with homemade gravy is a perfect pre-made food for starting the first busy week in 2014, also it is a real crowd pleaser for guest dinner event during the weekend!

Ingredient:

Meatball
1. 250 pork ground
2. 1 medium egg
3. 2 carrot, finely chopped
4. 1 onion, finely chopped
5. 2 garlic glove, finely chopped
6. 3 piece of cracker, smashed (I use olive flavor cracker, natural or tomato flavor is also fine)
7. 1 tsp nutmeg
8. 1 tsp salt
9. 1 tsp ground black pepper

Instruction:
1. Use a big bowel and combine all the ingredient. Blend until the mixture become sticky.
2. Form into meatballs about ping-pong size and place on a plate
 

3. Heat oil pan, fry the meatballs in batch, remove from the pan until golden brown.
 

4. Put into stew sauce (see HERE to make the most fantastic stew sauce ever) and bring to a boil. Cook with medium heat around 5-8 minute until meatballs absorb the sauce thoroughly.
 

5. Serve warm with rice or noodles.
