JiJu Inspiration - Double Sweet Potato Cheese Bread 黑糖蜜地瓜起司麵包


 

One amazing recipe is born without making accurate plans. This is always the fun part of cooking. I wanted to twist a bit the way of consuming sweet potato, all I did is start peeling it and make it cooked. I know I want to make a delicious bread, perhaps bun or dessert might be a brilliant idea, does not matter based on taiwanese or western style. I took out my beloved flour and black sugar, turned on the saturday morning music, just follow my instinct to play around the ingredients.

I had this conversation with friend who is a well-known lifestyle blogger writing different perspectives in her life. She also shares lots of amazing recipes based on her living experience in UK, NL and of course Taiwan. She said she always needs to follow the recipe with accurate measurement so that she can make sure the outcome is as perfect as she expect. On the contrary, I am a more flexible and spontaneous person who enjoy the fun and surprise in the kitchen.

As I said, this Double Sweet Potato Cheese Bread is one of the lovely treats I made successfully tasty. The whole inspiration is extract the essence of sweet potato with traditional black sugar and combine with hearty dutch cheese upgrading to a savory creamy bread. Ingredients:(Serving 4 breads)

1. 300g all purpose flour
2. 1/2 tsp yeast
3. 3 Tsp brown sugar
4. 1/8 tsp salt
5. Two medium sweet potatos, divided (one for dough, one for fillings)
6. 30g water (optional)
7. 2 slice of cheese

Instructions:
1. Peel sweet potato and cut into dice. Cook until it becomes soft. Mash half of portion for dough and keep the other half for fillings.*

2. Mix ingredient 1-4 with mashed sweet potato in a big bowel. When it starts becoming a dough, move to working table. Start kneading for at least 10 mins. The dough should be very soft, moist and smooth. Different kind of potato, for example, sweet potato with white yellow flesh is less sweet and moist than that with red or pink flesh, may need extra water. Add water gradually during the process if the dough is too dry. Proof the dough for 1 hour until it doubles its size

3. Squeeze out the air, and divide into 4 portion. For each of portion, circle into a round bun. Set aside for rest another 15 mins.

4. Take one bun, flatten with a pin and make it an ellipse. Place one full Tsp of cooked dice sweet potato in the middle and cover with 1/2 slice of cheese. Fold the dough into center and seal it by pinching two edges thoroughly and make it into a football shape. Repeat for the rest bun.

5. Place on the baking tray and put into oven for the second prof, 40 mins. Remove ready-prof bread out of oven, start preheating at 180c degree. Pop in the bread and bake at 180c degree for 20 mins. Golden brown sweet potato cheese bread is ready to warm up your heart.
